  • 1 1/2 cup plain yogurt I like home-made, but regular unsweetened plain works
  • 1 small cucumber peeled and grated or chopped fine
  • 1 tsp ground cumin
  • 1/2 tsp minced cilantro
  • 2 tsp minced mint
  • 1/2 tsp salt
  1. Stir all together and chill. Makes about 2 cups.
  2. Alternatives: add extra cilantro, leave out the mint and cucumber and add 1/2 jalapeno pepper. Or leave the cucumber and add 1/2 jalapeno for a nice mix of spice and cool.

I like to serve this with Potato Pancakes.
