This makes a big batch of sauce. For my family of 4 + 1 munchkin, we divide it into 3 meal-sized portions and freeze it in gallon sized freezer bags.
- 4 tbsp cornstarch
- 3 cups chicken broth
- 4 tbsp soy sauce
- 4 tbsp butter
- 3 c diced green (or other) bell peppers
- baby carrots (depends on how much you like carrots)
- 12 slices canned pineapple
- 1 c vinegar
- 1 1/2 c pineapple juice
- 1 c sugar
- 1 tsp salt
- 1/2 tsp ginger
Sauté the carrots and the peppers in the butter. Add the rest of the ingredients except the cornstarch and bring it to a gentle boil. Take some of the hot liquid and add it to the cornstarch in a small boil. Mix it to make a paste and then add it back into the boiling liquid. Boil until this thickens up a bit.
To serve, add chopped chicken, meatballs or sliced cooked sausages. Serve over rice. Everyone will want seconds. If you have a family that needs to not over-eat, make sure you’ve packaged this sauce in meal-sized portions, because there won’t be leftovers. This is one your family is likely to clean the pot on.
