Ingredients
- 1 pound small red new potatoes, cut into bite size pieces
- Several cloves of fresh garlic minced (amount depends on how much you like garlic)
- Extra-virgin olive oil use canola oil if you prefer
- Fresh rosemary leaves use dried leaves if fresh are not available
- Salt and pepper

Arrange potatoes in mounds on large pieces of aluminum foil. Each piece of foil should have enough potatoes for one serving (you decide how much that is!). Sprinkle minced garlic over potatoes. Drizzle potatoes with oil until coated. Season with rosemary, salt and pepper. Wrap potatoes into foil packages, using several (at least 2) layers of foil to prevent drips. Put foil packages on the top shelf of the grill over medium flame. Cook 30 to 40 minutes, turning over occasionally. The longer cooking time will allow some of the potatoes to char, if you like that. If you don’t like that, use the shorter cooking time. Remove from flame and open packages to serve — be careful when opening because potatoes will be really hot and there will be steam! Eat immediately, preferably with something else that’s been grilled. (You can make these in the winter in a large saute pan, but the taste isn’t quite the same.)
