I prefer these to the stuff you get out of a bag. There are two variations — one that you just add butter and water to, one that you add butter, egg and milk to.
- 7 cups flour
- 1 cup sugar
- 8 tsp baking powder
- 2 tsp salt
- 8 tbsp soy flour
- 1 1/4 cup powdered milk
To make pancakes, add 4 tbsp melted butter and about 1 cup water to 2 3/4 cups mix — to texture. This version is good to take camping. Cook on a well-greased, pre-heated griddle at about 350°F. This is also nice if you only want a couple of pancakes…just use less milk and add only enough water to come to texture. Drizzle in some melted butter and you’ve got pancakes for one. I think that’s as easy as the pancake in a can!
If you want to use the egg and real milk, make the mix leaving out the powdered milk and the soy flour. Then when you want pancakes, use about 2 cups mix and add 1 egg, 4 tbsp melted butter, and enough milk to get it to the right consistency.
