  • 2 lb ground beef
  • 2 eggs
  • 1 cup finely crushed crackers breadcrumbs or oatmeal
  • 1 tbsp dried parsley
  • 2 tsp minced onion
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp dry mustard
  • 1/2 tsp pepper
  • 1/4 cup water
  1. Combine everything in a food processor. Makes 80-90 meatballs.
  2. Form the meatballs with a small cookie scoop. Place them on an ungreased cookie sheet — make sure it has a lip, because there will be grease in the pan!
  3. Bake at 450°F for 8-10 minutes.

I use these as a base ingredient in several other recipes, but you can easily just add them to some spaghetti and sauce…or some of that sweet and sour sauce…
