Maxine’s Hawaiian Fruitcake

  • 2 cups flour
  • 2 cups sugar
  • 2 eggs
  • 1 (20 oz) can crushed pineapple and juice
  • 1 tsp baking soda
  • 1 cup chopped nuts
  • 2 cups powdered sugar
  • 1 stick butter
  • 1 package cream cheese
  • 1 tsp vanilla

Mix flour, sugar, eggs, pineapple, baking soda and nuts together in a large bowl. Pour into an UNGREASED 9″x13″ pan. Bake at 350°F for 30-40 minutes.

Beat the powdered sugar, butter, cream cheese and vanilla together well while the cake is baking. Frost the cake while it is still warm.
