  • 4 cups Instant Rice
  • 1 cup Frozen Peas cooked (a good use for leftovers from a previous meal)
  • 4 Scallions minced
  • Butter substitute margarine or vegetable oil if you prefer
  • Salt and Pepper
  • Grated Parmesan Cheese
  1. Boil 4 cups of water in a pot.
  2. Add instant rice and cover.
  3. Let sit for 5 to 10 minutes until all water is absorbed.
  4. While rice is sitting, melt butter in a large saute pan. Use enough butter so there is a thin layer of melted butter coating the bottom of the pan.
  5. Saute the scallions and peas until the scallions are soft.
  6. Add the rice to the saute pan. Cook for 5 minutes or so until the rice gets sticky, stirring frequently.
  7. Season with salt, pepper and Parmesan cheese.
  8. Serve warm.
