Instant Fried Rice
Warning: Rice purists, beware! This recipe is not for you!
Course: Side Dish
- 4 cups Instant Rice
- 1 cup Frozen Peas cooked (a good use for leftovers from a previous meal)
- 4 Scallions minced
- Butter substitute margarine or vegetable oil if you prefer
- Salt and Pepper
- Grated Parmesan Cheese
Boil 4 cups of water in a pot.
Add instant rice and cover.
Let sit for 5 to 10 minutes until all water is absorbed.
While rice is sitting, melt butter in a large saute pan. Use enough butter so there is a thin layer of melted butter coating the bottom of the pan.
Saute the scallions and peas until the scallions are soft.
Add the rice to the saute pan. Cook for 5 minutes or so until the rice gets sticky, stirring frequently.
Season with salt, pepper and Parmesan cheese.
